You should be good, aside from possibly swapping some of the track parts. Those look a lot like the 98 expo seats I have.

I wouldn't advise tapping into the marker lights to power any additional lights. The stock wiring isn't designed for that additional load. You could tap into the marker light's power wire to trigger a relay that would power the fogs directly from the battery. Depending on the year of truck...

Nice work! You can use a 7805 voltage regulator to make an adjustable voltage circuit with a resistor & a pot so you can fine tune the voltage to control brightness. I thought I had a schematic for the circuit on my photobucket, but can't find it now... a quick google search will return tons...
